Africa enters the race

5 candidates, 2 events, 5 hours and 30 minutes of competition... to win one of the two spots for the grand finale at Sirha Lyon in January 2025.

The Bocuse d'Or Africas is an event that brings together countries from the African continent that have held their national selections, to determine which two teams will have the chance to represent their country at the Grand Finale during Sirha Lyon.

The 2024 edition of the Bocuse d'Or Africa took place on September 12^th, 2024.

Sirloin of Beef, sweetbreads and carots : discover the tests for the Bocuse d'Or Africa 2024

The 5 teams had 5h30 to complete the two legendary tests of the Bocuse d'Or : the plate and the platter.

They highlight, for every continental selection, local and emblematic products from the host country.

Theme on platter

For the platter, the candidates had to work with Sirloin of Beef and Sweetbreads

They had to prepare a roasted Sirloin of Beef with Sweetbreads for 12 persons.
The platter must include 3 garnishes, and one of them must be typical from the team’s country.
Maximum one sauce is authorized, andit must be prepared during the competition.

A focus on carrots for the theme on plate

For the theme to plate, the contestants had to prepare a 3-course menu for 10 people, with the dominant ingredient being carrot.

The starter, served cold, had to consist solely of plant-based ingredients.

The main course, served hot, had to include three scallops, with the restriction of not using any other animal protein.

As for the dessert, it was freestyle (restaurant-style)
